As promised: the first complicated outfit of the month! This outfit actually reminds me of a movie that's coming out, The Lego Movie (don't make fun of me because I watch little kid movies...). There's a scene in the preview where one of the characters asks Batman (my favorite Superhero, btw. Besides Iron Man, of course) if he can make the batmobile in orange. Batman responds, "I only work in black. And occasionally very, very, very dark gray." So basically, I'm Batman. </div>

If you have a Pinterest account and are remotely interested in food, you've probably seen this pin. It has gone totally viral the past few weeks. So I thought, it's apple season, this pin is popular, I might as well try it out, right? Right. It was pretty delicious. Unfortunately, I left mine in the pan a little too long and it broke apart instead of being beautiful like the original photo above (from the original website). But it still tasted delicious! Also: I think it's pretty safe to say I use a lot of cinnamon.. Today my mom bought Cinnamon at Sam's Club, which means it's a ginormous container. When I asked why she bought so much she informed me that I've used an entire little container of cinnamon ever month for the past four months. Some things you just have to buy in bulk!</div>

You'll need 5 medium size apples for this recipe, peeled, cored, and diced. Cover them with the cinnamon and sugar and set overnight. I didn't read the recipe before starting, so I didn't really want to wait overnight to make the cake. If that's the case with you as well, you can do it the cheater way like me.. I just spread them in the bottom of a 9x13 pan and baked them at the lowest setting of my oven for about 10-15 minutes. The purpose of them sitting out was to allow the sugar to break down the apples a little to make them extra juicy, and so baking them accomplishes a similar effect in less than half an hour.</div>

Combine and set overnight:<br />
5 Medium Apples, peeled, cored, and diced<br />
2 t Cinnamon<br />
6 T Sugar<br />
<br />
3 C Flour<br />
3 t Baking Powder<br />
1/4 t Salt<br />
2 C Sugar<br />
1 C Vegetable Oil<br />
1/2 C Orange Juice<br />
2 1/2 t Vanilla<br />
4 Eggs<br />

Topping:<br />
1 Stick Butter<br />
2 t Cinnamon<br />
5 t Sugar<br />
<br />
Preheat your oven to 350 degrees. Mix the dry ingredients, minus the sugar, together. Mix the wet ingredients, plus the sugar, together. (keeping the apples separate). Combine the two until well mixed. Layer the apples and cake batter in a greased tube pan. Bake at 350 for 1 1/2 hours. While it is baking heat the topping over medium heat in a small saucepan until bubbling. Set aside. When the cake has finished baking pour the topping over it and leave it in the warm oven for 5 minutes. This will form a hard sugary coating that is totally delicious. Enjoy!<br />

Happy day five, y'all! Today was pretty lazy, I didn't wake up until 11 and then went to get groceries with my momma. So my dad's a Major now, no biggie.. ;) Actually, it's kind of a huge biggie cause it took a lot of work to get here! Anyway, congrats dad! I had to look more dressed up for the ceremony (which I was <i>kinda </i>late to...what can you really do about class schedules?) so I paired The Dress with a filmy Wet Seal top (thrifted), orange beads, pink earrings, and black heels. I had my same pink flats from yesterday on earlier in the day while going to class, but I switched to heels on the drive to the ceremony. Happy day four!</div>

Beat the heavy cream in an electric mixer until stiff peaks form. Transfer to a medium bowl and chill. In the bowl the cream was whipped in mix the peanut butter and cream cheese together until well combined. Add the powdered sugar and milk. Fold 1 C of the whipped cream into the peanut butter mixture until it is a lighter color and mostly combined. Layer however you like and enjoy!</div>

I feel like such an accomplished cook! I have officially cooked a whole pumpkin and pureed it into homemade "canned" pumpkin puree! And let me tell you, it's so much tastier than store bought. And it's actually way easier than it sounds! And it's cheaper! We got this pumpkin for $4, and I got over 8 cups of pumpkin puree. One 16 oz can at the store is usually about $1.50. Which would be $0.75 per cup. Cooking your own is $0.50 per cup. And when you love pumpkin as much as I do, you tend to use a lot, and therefore spend a lot... </div>

Put your pumpkin halves face down on a greased cookie sheet and bake at 350 degrees for at least an hour. Test it with a knife and when it is soft you can take it out. Let it cool and scoop the flesh out of the shell.</div>

Here we are at Day 2 already! Yesterday went SO fast. Probably because I didn't wake up until 10, but whatever... Sorry for the poor quality of these photos, but they were taken before I headed out to my 8am class, so you get what you get... Makes 12 cupcakes. Preheat oven to 350. Mix together all the dry ingredients. In a separate bowl cream together sugar, egg, and oil. Mix the wet and dry ingredients until just combined. Add the apples and mix thoroughly. The batter will be really thick, so you'll want to mix the apples so they let off some of their juice. Scoop into baking cups and bake at 350 for 30 minutes. While the cupcakes are baking prepare the icing. In a small saucepan melt the butter and heavy cream on medium heat. Add the brown sugar and bowl for 5 minutes. Remove from heat and add vanilla. Let cool. Drizzle over cooled cupcakes and enjoy! </div>

Has October sneaked up on anyone else? I feel like yesterday it was August and the first day of school! However, tomorrow is the first day of October and thus the first day of The October Dress Project! I would have shown you how it looked on, before alterations, but you probably don't want to see that.. It was QUITE the v-neck. I got it at Salvation Army for a few bucks, thinking that if I could add some fabric to the top it would be great and if not, I didn't waste too much money. Well once I got started, I decided the velvet needed to be taken off too, so it turned into kind of a long project, but I really like the way it turned out!</div>

I had a black tank top that I thought I'd just add to the existing top. After seeing how that looked, however, I decided I needed to cut the top out first, and then sew the lace to the tank top, then sew the tank top to the skirt again. </div>

Sorry for the blurry pictures, but at this point it was like midnight so it was pretty dark in my house.. After the lace was tacked to the shirt I just sewed it back onto the skirt (which I had taken the velvet off of. If I ever seam rip another seam it will be too soon!). Hi guys! I'm still alive! I haven't posted anything in forever because I've been so busy with school and work, but I'm getting back on it today! If you hadn't noticed, I've missed the "It's Just Lunch" post three weeks in a row (yesterday being the third week), so I'm making up for it by posting one late, and giving you a lot of dessert recipes this coming week :)</div>

I didn't really mind the little scratches, most of my shoes have them because I buy mainly from thrift stores. But I was about to do my nails and I thought "hey, my shoes are that color red, I wonder if I could paint the scratches so it wouldn't show." And guess what....it worked! So I definitely thought that this week's "It's Just Lunch" was going to be a dud. But luckily for me, it wasn't! They were absolutely delicious! Way better than bagels you would get from the store, and way less expensive! I was originally going to make these bagels for breakfast this morning and post them separately from "It's Just Lunch," but then I realized I still didn't have a post for this week so I'd better post these! And it worked out because they weren't done until noon anyway! If you do decide to make them, I would suggest starting the dough the night before, because it has to rise a while. </div>

3 1/2 C Flour (I used 1 1/2 C white flour and 2 C wheat flour)</div>

Toppings: coarse salt, onion and garlic, poppyseeds, cinnamon sugar, rosemary and thyme, oregano and garlic, basically whatever you want! Experiment with your favorite spices or keep it simple with plain bagels</div>

Sprinkle the yeast and sugar over 1/2 C warm water, but do not stir. Let sit for 5 minutes until frothy. While that is sitting mix the flour and salt in a stand mixer with the bread hook attachment. You can also do it in a large bowl with a spatula if you don't have a bread hook (but if you make a lot of bread they're definitely worth the investment). Make a well in the middle of the flour and pour in the yeast mixture and another 1/2 C warm water. Mix together until moist and dense. Add the other 1/2 C warm water 1 T at a time, just until all the flour is incorporated and the dough is slightly moist. Knead by hand for 10 minutes. Put the dough in a lightly oiled bowl and place a damp tea towel over it. Let it raise for 1 hour or until doubled in size. The best place for bread to rise is somewhere warm, so I just put mine in the oven at the lowest heat (mine only goes down to 170 degrees) with a small bowl of water under it. After the dough has doubled in size punch it down and let it rise an additional 15 minutes. Preheat your oven to 430 degrees and put a large pot of water on the stove to boil. Take out the dough and separate it into 8 equal parts. Mold your dough into discs by pressing them down on the counter. Poke a hole through the middle and stretch the hole out until it's about 1/3 the size of the bagel. (this isn't as hard as it sounds, just make it into a bagel shape) When your water is boiling float as many bagels will fit in the pot. Boil them for 1-2 minutes on each side (the longer you boil them the chewier they will be). After they have boiled you can add any toppings you like. If you want to add bigger spices or minced onion I would suggest adding it to an egg wash so it doesn't fall off when you bake it. Bake at 430 for 20 minutes. Enjoy!</div>

Guess what guys...I went shopping on Wednesday! Which means NEW (to me) CLOTHES! Which is pretty much my favorite thing ever, besides spending time with my family and friends, which can be done while shopping, so that's pretty awesome. So I got this dress at one of the thrift stores my mom and I went to for like $6. It reminds me of a flower and will from now on be known as my petal dress. It's getting way cold here (it was in the 30's last night) and the dress is strapless so I had to wear a little sweater (purchased at a garage sale for $0.50) and tights to keep warm. I wanted to pair it with these super cute new heels that I purchased, but I thought that would be too dressy for Bible Study and school, so I went with my silver sparkly TOMS. I'm also wearing my spoon ring (tutorial found <a href="http://shoesandshortcakes.blogspot.com/2013/06/pinterest-weekend-installment-two.html" target="_blank">here</a>), charm bracelet, treble clef earrings, and black and gray headband. It was really easy to make, because we had a cornbread mix that I used for the cornbread. I just mixed up the mix, stuck it in the waffle iron, and waited for the light to go off. Then I microwaved the leftover chili, topped with cheese and had lunch! Delicious and easy :)</div>

So I'm sure most of you have seen the pin about cutting bottles with string and fire. I've been wanting to try this one for a while, and I decided this past Sunday was the perfect day. I had been saving these bottles for about a month for such a time as this.</div>

I washed the labels off with warm water and got everything set up. I bring it all outside when I hit my first pitfall. My mother was sitting outside and she kind of freaked out about the fact that I was lighting bottles on fire on her front porch... After it was OK'd by dad (with the condition that I wear safety goggles) I was back on my way. </div>

Although the bottle says extremely flammable, I had a really hard time getting the string to light on fire. No biggy, I just switched to rubbing alcohol and that lit up just fine. I let the flame burn for about 30 seconds before I dunked it in the ice water pot. It cracked almost all the way around, and I just had to knock the top against the pot a few times before the whole top broke off. It's not a perfect straight line, but I think that adds character.</div>

The next one was a little more eventful. I soaked the string, wrapped it 6 times around the bottle, lit it on fire, and let it go. It all seemed to be going perfectly! </div>

I'm officially a college student! I'm headed to my very first class this morning! :) Now most people would be worried about homework, or what their professors will be like, or things like that. I'm not too worried about that. But what's been on my mind the past few days is what I'm going to wear to my first day of classes. I had it all figured out until I went shopping yesterday and found these shorts at a thrift store. They're from The Limited. They're brand new. Like the tags were still on them. I've seen this floating around Pinterest for a while and have always wanted to try it. I thought it would be really helpful come school, so I made it this past week. I wanted to stick with nuetralish colors, so I could transfer the calendar to my dorm room next fall. I picked black, white, and pink because those are the colors of my room right now. I laid out the frames how I wanted them and decided which frames I wanted which color. </div>

It was all going perfectly well until I ran out of white paint. No problem, I thought, I'd just go to the store the next day and get it all finished. In the meantime I shellacked the ones I had finished painting and left them outside to dry. Unfortunately, it started pouring down rain and my paint jobs was ruined. </div>

I had also stacked up all the glass from the frames and they were sitting on the floor in my room. Which is never a good place for glass... I stepped on the pile on accident and cracked my biggest piece of glass. In the end it worked out, I just used a different frame and got everything painted again. Although it took much longer than I thought it would, it looks great and I think it will be really helpful this fall! </div>

Although it doesn't look too delicious, it tastes incredible! I'm trying to get as much out of raspberry season as possible. It's super easy to make and it lasts a super long time! I put mine on waffles made from bisquick mix, but you can spread it on whatever you like. </div>

I have always loved hummus, but I don't usually get the chance to eat it because of two things. One, it's a little expensive, and two, my mom doesn't like it so she doesn't think to buy it. I've seen recipes going around Pinterest and have been meaning to try some for a while now, and I just got around to it because of "It's Just Lunch!" I had read lots of recipes and they all called for tahini, which is expensive. I looked up substitutes and got mixed responses. Some people say peanut butter would be a terrible substitute and the money to buy tahini is worth it, others say you can't taste the difference. So I decided just to try it and if it was terrible, well that was the point of this blog post series! So I mixed it all up and I think it's pretty good! I'll have to play around with the flavors a little bit, I think I'll browse the refrigerator section for inspiration! </div>

1/4 C Peanut Butter</div>

1 Garlic Clove</div>

Drain and rinse your chickpeas. Empty the can into a small pot and cover with water, so there is about an inch over the peas. Boil for 10-15 minutes or until soft. Drain the water, but keep it aside to add later. If you have a food processor you should use that, but since I didn't I used a handheld mixer and a bowl. I tried using a blender, but I found the mixer worked better. Mix the peanut butter, lemon juice, garlic, and salt together in the bowl. Add softened chickpeas and mix. At this point your hummus will be pretty dry. Add the cooking water a little at a time until you like the consistency. I added between 1/4-1/2 C of water. Mix until smooth. This will take a while, just be patient :) Add whatever other flavors you like, I sprinkled paprika, olive oil, and chili powder on mine. Enjoy with whatever you'd like to dip in your hummus!</div>

So it's officially August. Summer is coming to an end. And here in New York, that means the short-lived warmth is coming to an end. I decided to get my filmy ruffles in while I still could! I bought this Ann Taylor shirt while thrift shopping yesterday for less than $2, and I got the New York & Company skirt at a different thrift store a while ago for a similar price. Gotta love great brands for great prices!</div>
